I'm used to backing up my pictures and videos (and files) to my iCloud or Google Cloud account. What should I do instead?

STOP FEEDING YOUR DATA TO GOOGLE AND APPLE. Local external hard drives have become relatively cheap lately. Connecting such a hard drive, or even a storage stick with a USB-C input, and going to Settings/System/Backup makes the process super simple.
